Birthday Cake Cookies

Call it funfetti, call it sprinkles – I call it yummy! These birthday cake cookies are read for your next party (even if that’s just you and a glass of milk).

Soft, chewy, and loaded with sprinkles — these Birthday Cake Cookies are the easiest way to bring celebration to your kitchen! Bake them for birthdays, parties, or anytime you need a little fun.

Just call me the cookie queen!

I can’t help it. I love cookies. They are – by far – my favorite thing to bake. After making Funfetti Cookies with Oreo Center I wanted to make them again. But this time, with a little less Oreo center, and a little more white chocolate chips.

And Ta-da! Birthday Cake Cookies were born! With both brown and granulated sugar and some white chocolate chips, they’re pretty sweet. So if you’re craving a cookie that tastes good with coffee, make a batch of these.

With the pretty rainbow sprinkles, they’re the perfect cookies to serve at birthday parties, bridal showers, or just to celebrate how awesome it is being you.

Plus, you can freeze the cookie dough for later!

Pretty Sprinkle Cookies

Both the sprinkles and the white chocolate chips in these tasty cookies make me smile. I know they’ll make you (and anyone you give them too) smile just as much.

They aren’t just happiness-inducing treats. They’re some of the easiest cookeis to whip up, too!

And this is one of those super-easy ones.

It’s just as easy as my peanut butter or chocolate chip cookies. You literally put everything in the bowl, mix them up, shape them, and bake them!

Ingredients You’ll Need to Make Birthday Cake Cookies

The best part? You only need a handful of pantry staples:

  • Butter
  • Granulated sugar
  • Brown sugar
  • Egg
  • All-purpose flour
  • Salt
  • Baking soda
  • White Chocolate Chips
  • Sprinkles

Make It Seasonal

Right now, these cookies look like a playful birthday cake. But you can make Christmas cookies, Halloween cookies, or even Easter cookies – all by just changing the sprinkles.

Find your favorite seasonal sprinkles and use them. You can even change the flavors, too. If you want Christmas cookes, then use peppermint chips and red and green sprinkles.

How to Make Birthday Cake Cookies

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium-sized mixing bowl, mix together melted butter and both sugars.

Once the sugars and butter are mixed, add egg and mix.

In the same bowl, add flour, baking soda and salt. Mix until a cookie dough forms.

Fold in chocolate chips and sprinkles.

Using a standard sized cookie scoop, scoop mounds of cookie dough onto lined baking
sheet (about 1.5 tablespoons).

Bake for 8 to 10 minutes. Allow to cool for 10 minutes and enjoy.

How To Store Birthday Cake Cookies

You can make these ahead of time and hand them out as gifts. Just store them in an airtight container. They will stay fresh for up to a week. If you’re going to store them in more than one layer, place some wax or parchment paper in between each layer.

You can freeze the cookie dough, too. Keep it in a freezer-safe container for up to six months.

Ingredients
  

  • ¼ cup butter melted
  • ¼ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 egg room temperature
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup white chocolate chips
  • 6 tbsp sprinkles

Instructions
 

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • In a medium-sized mixing bowl, mix together melted butter and both sugars.
