Apple Crumble Cookies

These Apple Crumble Cookies combine soft cinnamon-spiced dough with a buttery crumble topping: just like your favorite fall dessert, in cookie form!

There’s something about fall that just begs for homemade pies and desserts. But not just any desserts – apple and pumpkin desserts.

After a full day of apple picking at a local orchard, core and dice your apple and make some cookies! (Let’s be honest. They’re so much easier than pie!)

You’ll have so much fun making them, and they taste just like an apple cobbler, but without all the work.

One bite and you’ll feel all the warm fuzzies of fall. The cinnamon, brown sugar, buttery, and that incredible crumb topping.

Fall Apple-Picking Cookies

If you’ve made any of my easy cookie recipes before (or read through my free e-Book The Sweet Six), then you know how much I love to save time by using familiar recipes.

Well…I’m sorry to say this isn’t using one of those.

But don’t worry!

It’s just as easy as my peanut butter or chocolate chip cookies. I adjusted this recipe so I could add oatmeal and real diced apples. This way, they feel and taste just like a fall apple pie.

Seriously, this recipe is just as easy as all my other ones. The most difficult part is peeling, coring, and dicing your apple. But it’s only one apple, so it’s not so bad.

Trust me, using a fresh apple makes all the difference.

Ingredients You’ll Need to Make Apple Crumb Cookies

The best part? You only need a handful of pantry staples:

  • Butter
  • Granulated sugar
  • Brown sugar
  • Egg
  • All-purpose flour
  • Rolled Oats
  • Salt
  • Baking soda
  • Apple
  • Cinnamon

What type of apple is best to bake with?

I know that most people will say you should use Granny Smith or another less-sweet variety. And they’re right. But I only used one apple in the entire batch of cookie dough, so you can use any type of apple that you want.

Just remember that the really sweet ones – like Red Delicious – will make the cookies taste really sweet. If you don’t like overly-sweet desserts, either use Granny Smith apples or cut back on the amount of granulated sugar.

How to Make Apple Crumb Cookies

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and well combined. Add the egg and mix until fully incorporated.

Stir in the flour, rolled oats, baking soda, cinnamon, and salt until a soft dough forms. Gently fold in the diced apple.

In a separate small bowl, combine the flour, brown sugar, cinnamon, and a pinch of salt for the crumble topping. Pour in the melted butter and mix with a fork until the mixture becomes crumbly.

Scoop tablespoon-sized portions of cookie dough (we used a cookie scoop) onto the prepared baking sheet, leaving space between each one. Sprinkle a spoonful of the crumble topping over each cookie.

Bake for 12 to 15 minutes, or until the edges are lightly golden and the tops look set.

Let the cookies cool completely on the baking sheet before moving them: they’ll be too soft to handle while warm, but will firm up beautifully as they cool.

How To Store Apple Crumb Cookies

Unlike other kinds of cookies, you don’t want to store these at room temperature. Place your leftover apple crumb cookies in an airtight food storage container and keep them refrigerated. They will stay fresh for about a week.

You can freeze the cookie dough, too. Keep it in a freezer-safe container for up to six months.

  • 1/2 cup Butter
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar packed
  • 1 large Egg room temperature
  • 1 cup All-Purpose Flour
  • 1 cup Rolled Oats
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1 medium Apple peeled, cored, and diced

Crumble Topping

  • 1/2 cup All-Purpose Flour
  • 1/4 cup Brown Sugar packed
  • 1/2 tsp Ground Cinnamon
  • 1 pinch Salt
  • 3 tbsp Butter melted

Instructions
