Coffee Crinkle Cookies
Imagine your favorite latte in cookie form, and you have these coffee crinkle cookies. Made with basic pantry staples, they’re ready in 15 minutes.

I can’t get over how delicious these cookies are. First, there’s the soft icing sugar dusted on the outside. Then, you bite into the crispy outside and sink your teeth into the soft filling.
Before you get all worried, no, they don’t taste like straight coffee! Instead, the coffee adds some deeper flavor notes that balance all the sugar inside (and outside) the cookies.
The result is a crinkle cookie recipe without chocolate. The coffee, brown sugar, and cinnamon make the cookies taste like a latte. So you could call them espresso crinkle cookies, too. I call them the amazing disappearing cookies, because they don’t last more than a day.
What Are Crinkle Cookies?
Traditional crinkle cookies are made with cocoa powder, so they end up tasting like brownies and cookies combined.
But, unlike a brookie, crinkle cookies are rolled in powdered sugar so that they crack as they bake, making the iconic crinkles they’re known for.

My coffee crinkle cookies don’t have any chocolate in them at all. I felt like the chocolate made them taste far too rich with the coffee. But if you’re really craving chocolate, make my Red Velvet Brownies next. They’re topped with Oreos, so they’ll definitely satisfy your sweet tooth.

What Ingredients Do I Need To Make Coffee Crinkle Cookies?
If you love to bake, then you probably already have everything you need. Here’s what I used when I made these scrumptious cookies.
- Instant Coffee
- Flour
- Salt
- Baking Powder
- Butter
- Brown Sugar
- Granulated Sugar
- Egg
- Icing Sugar
- Ground Cinnamon

How Long Will The Cookies Last?
There are two ways to store the crinkle cookies. Keep the baked cookies in a sealed container at room temperature. They will stay fresh for about a week this way.


If you need them to last longer, then freeze them. Place them in a food-safe freezer bag. They will stay fresh in the freezer for about six months.
Can I Use Ground Coffee Instead of Instant?
I don’t recommend trying to replace the instant coffee with ground coffee. Ground coffee won’t dissolve or mix into the other ingredients completely. This means, you might notice a gritty texture in the cookies.
If you don’t have instant coffee, you can use instant espresso in its place. But don’t try to use ground coffee beans.
You only need one tablespoon of instant coffee. If you don’t normally drink it, you can get a really small amount from the store.
How To Make Coffee Crinkle Cookies
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set
aside.
Then, add brown sugar and instant coffee to a mixing bowl, and pour over warm melted butter.
Mix thoroughly.

Add egg and mix until well combined. Next, add all the dry ingredients: flour, cinnamon and baking powder. A sticky cookie dough will form.

Grab a mound of cookie dough with your hands (a sphere about an inch and a half in diameter): coat it thoroughly in granulated sugar, followed by the icing sugar.

Place the coated cookie dough gently on lined baking sheet, with each cookie about 2 inches apart from each other.
Bake for 9 to 11 minutes. Allow to cool before serving and enjoy!

- ¼ cup butter melted
- 1 large egg room temperature
- ¾ cup all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- ¼ cup granulated sugar
- ¼ cup icing sugar
