Everything about this recipe is completely homemade. From the chocolate chip cookie dough (that you can find on The Sweet Six) to the homemade brownie batter, you’ll taste the difference. When you make everything homemade, the flavors are stronger and the aroma is more powerful.

Skillet Brookie

There are a lot of different ways to bake brookies. I chose to use a skillet because I’m a busy mama and adding everything to the skillet is so much faster than scooping cookies onto a baking sheet.

I used a large cast-iron skillet. I love that it’s oven-safe and it’s really easy to clean. It’s naturally non-stick and helps the brookies get beautifully crispy.

If you want to change up this recipe, make them in a muffin tin! Brookie muffins are perfect for birthdays, baby showers, or whenever you have to provide a lot of desserts to celebrate something special.

Best Cookie Dough For Brookies

My Chocolate chip cookie dough from the Sweet Six is the base of this recipe. It’s a simple recipe that lets you cookie homemade desserts without feeling like you’re spending hours in the kitchen.

I would call this recipe comforting and recognizable. The chocolate chip cookie base is incredibly familiar. Then, I mixed up a basic brownie batter and dropped them into the cookie dough.

If you love chocolate, then you’ll really enjoy this simple (and homemade) recipe. And to make it even richer, use dakr cocoa powdder and drizzle the brookie with more chocolate sauce (sugar-free, of course!).

Brookie Tips

If a cast iron skillet is naturally non-stick, why spray it with cooking spray. Well, the right kind of cookie spray will enhance the flavors of the brookies, But also, it gauruntees that cookies won’t stick. Even cast iron skillets get a few bad spots in them once in a while.

There is another step that asks you to melt the butter on the stove. This is because you’re going to use the melted butter to make the brownie mixture. Do this step very carefully. Keep the heat at medium and stir it frequently. You don’t want the butter to burn.

How Long Will Brookies Last?

To store the brookies, remove them from the skillet and keep them in an airtight container or resealable plastic food storage bag. They will stay fresh in the pantry for up to a week.

You can freeze the brookies, too. Cut them into smaller peices and the wrap each piece in plastic wrap. Then, put them in the freezer. They will stay fresh for up to six months.

How To Make Skillet Brookies

Start out by spraying a cast iron skillet (10 inches) with cooking spray and set aside. Then, preheat oven to 350 degrees F.

Next, melt butter in a medium-sized saucepan over medium heat.

Once butter is melted, remove from heat and add sugar and cocoa powder. Mix well.

Next, add eggs and mix thoroughly. Sift flour and salt into the wet ingredients and mix until a brownie batter forms.

Pour into the coated skillet. Drop cookie dough by the spoonfuls on top of the brownie batter.

Bake for 28 to 30 minutes or until a toothpick comes out clean when inserted in the center.

Allow to cool for about 10 minutes, and serve!

  • Cookie dough enough dough to make one dozen cookies
