Baking is my love language, so you know I’m going to be whipping up something sweet for the sweetest day of the year! And since red velvet is one of my favorite types of cake, I decided to make some gooey brownies that taste just like it.

Oh, and of course, I topped them with some Oreo cookies. It takes the brownies from incredible to EYE-POPPING-AMAZING. And they’re ready in 30 minutes.

What Is Red Velvet?

Fun fact: the first red velvet cake was actually a chocolate cake that was made with cocoa powder, buttermilk and vinegar. The vinegar mixed with all the ingredients, and the chemical reactions gave it a red hue.

Since then, a lot of bakers have just added red food coloring to chocolate cake and called it red velvet. I’m not gonna lie – that’s what I did, too.

Many classic red velvet cakes will also have a cream cheese frosting. I chose to do a cookies and cream topping with Oreos instead – it’s way better, trust me!

Other Names For The Brownies

What else could you call them? Well, you could call them Red Velvet Cookies and Cream Brownies. The white chocolate chips add a sweet creaminess to the brownie filling, so that’s a perfect name.

You can also just call them Oreo Valentine’s Day Brownies! They’re the perfect little desserts to whip up when you’re celebrating the day of love.

How Long Will Brownies Last?

If you store them correctly, the baked brownies can last up to three months. Here are my favorite ways to store them and how long they will last in an airtight container in each.

  • Room Temperature – 3-4 Days
  • Refrigerator – one week
  • Freezer – 3 months

What Are Some Different Topping Ideas?

Adding the Oreos is optional. If you don’t like Oreos, skip them! These brownies will taste perfect without anything on top.

But, if you want to add something as a topping, try one of these ideas:

  • Cream Cheese Frosting
  • Hershey’s Cookies and Cream Chocolate Bar Pieces
  • White Chocolate Ganache Drizzle
  • Whipped Cream
  • Chocolate Chips

How To Make Red Velvet Brownies

Start by preheating your oven to 350 degrees and line a square pan (8×8) with parchment paper that overhangs the sides.

Then, melt the butter. If you are melting it over a stovetop in a saucepan, remove it from the heat once completely melted.

Next, add sugar and mix thoroughly. Once the sugar is combined with the melted butter, add cocoa powder and salt. Mix it well.

Add the red gel food coloring – be sure that it is gel food color, as this will give your red velvet brownies its vibrant color. Liquid food coloring will dilute your brownie batter, and its color is not concentrated enough.

Add the eggs and whisk them into the batter.

Once your wet ingredients are thoroughly combined, add flour and mix until everything is well combined and you come out with a smooth batter.

Next, fold in the white chocolate chips and pour the batter into your lined pan and top off with Oreo cookies, if desired.

Bake for 28 to 30 minutes, or until a toothpick comes out clean when inserted in the center of the brownies.

That’s it! The hardest part is letting them cool off before cutting into them.
