Those who know me, know that I have a MAJOR sweet tooth. However, the older I get, the more I feel those desserts sliding straight to my hips. This has prompted me to be a lot more mindful with the food that I consume. Whenever I can, I opt for healthier alternatives.
What Is a Good Dessert Option for After Dinner?
Most recently, I’ve been really into my Cashew Oat Bars. They make for a healthier alternative to chocolate chip cookies, and still offer tons of delicious flavor.
Sometimes, I ask myself, “I want to snack on something, but how can I do this in a more healthy way?!”
These Cashew Oat Bars are definitely the answer.
What Ingredients Do I Need to Make These Cashew Oat Bars?
Good news is that these oat bars don’t require very complicated ingredients. Feel free to gather the following ingredients to make a batch of your own (the exact measurements are at the bottom on the printable recipe card):
- Quick oats
- Baking powder
- Baking soda
- Eggs
- Cashew butter
- Maple syrup
- Miniature chocolate chips
Which Cashew Butter Do You Recommend?
Our family often visits Toronto (our Toronto summer visits happen to be one of my favorite annual vacation of ours), and every time I’m in town, I just have to visit The Roasted Nut. They have the BEST Cashew Butter Latte (it’s my go-to on our daily morning walks).
All that to say, The Roasted Nut also has a wide range of different nut butters – and their cashew butter is my all-time fave. Their cashew butter is what I use for this particular Cashew Oat Bars recipe.
How Do I Store Cashew Oat Bars?
To properly store these oat bars, be sure to cut them into squares and place them in an airtight container. They can stay in room temperature (while in that container) for up to 3 days.
Are These Oat Bars No-Bake?
Nope! Great question, though – a lot of oat bar recipes do not require any baking. However, these ones do go in the oven for just under 30 minutes.
Cashew Oat Bars
Ingredients
- 2 cups quick oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg
- ¾ cup cashew butter
- ¾ cup maple syrup
- 1 cup miniature chocolate chips
Instructions
- Preheat oven to 350 degrees F. Line a square 8×8 baking pan with parchment paper and set aside.
- In a mixing bowl, gently mix quick oats, baking powder and soda. Set aside.
- In a large bowl, whisk egg and add cashew butter. Mix until well-combined.
- Add syrup to cashew butter mix.
- Slowly incorporate dry ingredients to wet ingredients. Once ingredients are well-mixed, fold in chocolate chips.
- Place the batter evenly onto the metal pan. Press down firmly.
- Bake for 25 to 30 minutes. Cool on a wire rack for 5 minutes. Cut into squares and enjoy!
