Cashew Oat Bars

- 2 cups quick oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg
- ¾ cup cashew butter
- ¾ cup maple syrup
- 1 cup miniature chocolate chips
Preheat oven to 350 degrees F. Line a square 8x8 baking pan with parchment paper and set aside.
In a mixing bowl, gently mix quick oats, baking powder and soda. Set aside.
In a large bowl, whisk egg and add cashew butter. Mix until well-combined.
Add syrup to cashew butter mix.
Slowly incorporate dry ingredients to wet ingredients. Once ingredients are well-mixed, fold in chocolate chips.
Place the batter evenly onto the metal pan. Press down firmly.
Bake for 25 to 30 minutes. Cool on a wire rack for 5 minutes. Cut into squares and enjoy!
