One-Pot Beef Stroganoff
This one pot beef stroganoff is made straight in a Dutch oven, meaning minimal mess and more time for the important stuff in life!
Welcome back to Moments With Lisa, foodie friends! It’s been a while since I last posted, but I am thrilled to be back in action, doing what I love most: food blogging!
For the past month, I’ve been hooked on one-pot meals. My main motivation behind this shift is to maximize my post-work hours for quality family time. Instead of being tied down in the kitchen before and after dinner, one-pot meals have become my go-to solution.
Why Beef Stroganoff and What Is It?
I must admit, beef stroganoff wasn’t always my “go-to” for weeknight dinners. When my husband requested it, however, I saw an opportunity to reinvent it as a convenient one-pot meal. I thought, ‘Why not combine the flavors we love into a simpler, time-saving dish?
Beef Stroganoff is a dish that is traditionally made with sautéed strips of beef, onions, and mushrooms in a rich sour cream sauce. This hearty and flavorful dish is typically served over egg noodles or rice, making it a comfort meal perfect for any occasion!
My version uses ground beef and is made directly in my Dutch oven… and nothing else!
What is a Dutch oven?
A Dutch oven is a versatile and durable cooking pot with thick walls and a tight-fitting lid, usually made of cast iron or ceramic. I use this one from Le Creuset (so it’s also often referred to as a French oven). These cooking appliances are ideal for slow cooking, braising, baking, and roasting, which is why it is such an important staple in many kitchens. Dutch ovens distribute heat evenly and retain it effectively, allowing for tender and flavorful dishes to be prepared with ease.
What is a One-Pot Meal?
A one-pot meal is a convenient and time-saving cooking method where all the ingredients for a complete dish are cooked together in a single pot or pan. This approach minimizes cleanup and simplifies the cooking process, making it ideal for busy individuals or families looking for quick and easy meal options without sacrificing flavor.
How to Make a One-Pot Beef Stroganoff
This one-pot Beef Stroganoff is an absolute game-changer. You’ll have a delicious dinner done in a few easy steps and with minimal dishes used!
Ingredients Required
Before putting together this one-pot dinner, be sure you have the following ingredients:
- Butter
- Extra virgin olive oil
- Yellow onion
- Salt and pepper
- Ground beef
- Garlic powder
- All-purpose flour
- Beef stock
- Worcestershire sauce
- Dijon mustard
- Egg noodles
- Sour cream
How long does it take to make?
Prep time is about 10-15 minutes and cooking time is 30 minutes.

Can You Freeze Beef Stroganoff?
Yes! If you have any leftovers, be sure to cool them down completely then add to a freezer-friendly container. You may freeze it up to three months.
You can also refrigerate it in an airtight container. It will stay good in the refrigerator for up to 5 days.
One-Pot Beef Stroganoff
Ingredients
- 2 tbsp butter
- 2 tbsp Extra virgin olive oil
- 1 ½ cups mushrooms thickly sliced
- ½ medium yellow onion diced
- 1 lb ground beef
- Salt and pepper to taste
- 3 tbsp garlic powder
- 1 tbsp smoked paprika
- 4 cups beef stock
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- ¼ cup all-purpose flour
- 4 ½ cups egg noodles
- ½ cup sour cream
- Dried parsley flakes optional
Instructions
- Set a large pot or a Dutch oven on your stove and add butter and olive oil. Set heat to medium and let it heat up.
- Once heated, add mushrooms and onion. Cook for 3-5 minutes, or until onions sweat.
- Add ground beef and cook through. Season with salt, pepper, garlic powder and paprika.
- Add beef stock and incorporate Worcestershire sauce and Dijon mustard.
- Slowly mix in all-purpose flour.
- Add egg noodles, cover, and bring to a boil. Reduce heat and cook for 9-10 minutes, constantly checking to make sure that noodles are not drying out. Feel free to adjust and add more stock if necessary.
- Remove from heat and fold in sour cream. Serve and sprinkle with dried parsley.
