One-Pot Beef Stroganoff

This one-pot beef stroganoff is made straight in a Dutch oven, meaning minimal mess andmore time for the important stuff in life!

Ingredients
  

  • 2 tbsp butter
  • 2 tbsp Extra virgin olive oil
  • 1 ½ cups mushrooms thickly sliced
  • ½ medium yellow onion diced
  • 1 lb ground beef
  • Salt and pepper to taste
  • 3 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 4 cups beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • ¼ cup all-purpose flour
  • 4 ½ cups egg noodles
  • ½ cup sour cream
  • Dried parsley flakes optional

Instructions
 

  • Set a large pot or a Dutch oven on your stove and add butter and olive oil. Set heat to medium and let it heat up.
  • Once heated, add mushrooms and onion. Cook for 3-5 minutes, or until onions sweat.
  • Add ground beef and cook through. Season with salt, pepper, garlic powder and paprika.
  • Add beef stock and incorporate Worcestershire sauce and Dijon mustard.
  • Slowly mix in all-purpose flour.
  • Add egg noodles, cover, and bring to a boil. Reduce heat and cook for 9-10 minutes, constantly checking to make sure that noodles are not drying out. Feel free to adjust and add more stock if necessary.
  • Remove from heat and fold in sour cream. Serve and sprinkle with dried parsley.
