Anyone who knows me knows how much I love to cook. Living in a two-bedroom condo, people often tell me how my kitchen space is limited. Luckily, the developers of our building really kept the quality and functionality of the units’ kitchens in-mind. Sure, they’re a bit small, but considering its size, we have plenty of room, including soft-closed pantries and cabinets, built-in oven and cook tops, quartz countertops, etc.
Safe to say: I absolutely adore cooking in our kitchen.

My Struggle With Lunch
I may adore cooking in my kitchen, but I hate cooking my daily lunch. Lunch has never been my favorite meal. Even as a little girl, I dreaded both paper bag lunches and cafeteria options. Now, as an adult, I view lunch as an interruption to my busy day. As an entrepreneur juggling multiple brands, I’m up to my neck in constant work. It’s a bad habit, but I often skip my mid-day meal. I recently recognized how I needed to find balance, and this Roasted Tomato and Ricotta Toast is one of my best solutions!

As a true millennial, I have tried my hand at various types of avocado toast. I mean, how can I not?! There are SO many possibilities, and they’re a great way to get in a healthy, delicious meal in the middle of the day.
BUT, there is one downfall: I have an intolerance to avocados. This is exactly why I need an avocado toast alternative.

This avocado toast alternative is great for those with avocado allergies and intolerances. The reason why avo toast is so popular is because it’s easy to whip up and is generally a pretty healthy meal.
Well, my roasted tomato and ricotta toast boasts the same benefits: good-for-you ingredients and tons of flavor!
This toast recipe consists of artisanal bread topped with perfectly roasted cherry tomatoes, ricotta cheese, and a generous drizzle of extra virgin olive oil.



What Ingredients Do I Need to Make Roasted Tomato and Ricotta Toast?
Be sure to gather the following ingredients to make Roasted Tomato and Ricotta Toast:
- Artisanal bread
- Cherry tomatoes
- Salt and pepper
- Ricotta cheese
- Extra virgin olive oil
Can You Freeze Leftover Tomato Toast?
This roasted tomato toast is best eaten once it’s made, and does not keep in the fridge/freezer very well. We recommend eating it right away… plus, it’s so delicious that you won’t even be able to keep any leftovers!
Are There any Ingredient Alternatives?
Since this recipe is so simple, we suggest staying as close to the ingredient list as possible. However, feel free to sprinkle on additional ingredients (as toppings) such as:
- Fresh basil
- Crumbled bacon
- Fresh mint
- Everything bagel seasoning

Avocado Toast Alternative: Roasted Tomato and Ricotta Toast
Ingredients
- 2 cups cherry tomatoes
- Salt and pepper to taste
- 2 slices artisanal bread
- 3 tbsp ricotta cheese
- 1 tbsp extra virgin olive oil
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
- Slice each cherry tomato in half. Place on lined baking sheet and season with salt and pepper.
- Bake in the oven for about 15-17 minutes. Remove from the oven and add artisanal bread slices on the baking sheet.
- Bake for an additional 3-5 minutes.
- Remove from oven and place bread on serving plate. Add cherry tomatoes and ricotta taste, respectively on each piece of toast.
- Add ricotta cheese evenly between each piece of toast and drizzle with olive oil.
