Strawberry Shortcake for Celebrating
This year, my husband Joe asked for a homemade strawberry shortcake. Being the food enthusiast that he is, Joe was aware of how time-consuming a classic strawberry shortcake can be, especially with a busy schedule fulfilling cookie orders over his birthday weekend.
He almost let go of the idea of a homemade version of this strawberry-inspired cake, but I found an alternative. This is how I came up with my super easy version of strawberry shortcake.
How to Make the Easiest Ever Strawberry Shortcake
Wondering how I make my easy strawberry shortcake so delicious (and so simple to whip-up)? My secret is using a boxed cake mix! While homemade is usually preferred, with my homemade vanilla filling, you won’t even notice that the cake itself is store-bought.
What Ingredients do I Need to Make a Quick Strawberry Shortcake?
Be sure to gather the following ingredients for your oh-so-easy strawberry shortcake:
Boxed cake mix (vanilla) plus all ingredients to make it
- Cream cheese
- Powdered sugar
- Whipping cream
- Strawberries
Doesn’t strawberry shortcake usually contain strawberry jam?
There are some versions that do! Mine in particular skips out on it!
Don’t forget to soften the cream cheese!
Make sure that you are working with softened cream cheese, so be sure to take it out of the refrigerator at least 2 hours before prep-time.
Easiest Ever Strawberry Shortcake Recipe
Ingredients
- Vanilla cake mix + all ingredients required to make it
- 8 oz. cream cheese softened
- 1 cup powdered sugar
- 2 cups cold whipping cream
- 2 cups sliced strawberries
- Whole strawberries optional
Instructions
- Prepare vanilla cake mix according to box’s directions. You’ll need 2 eight inch cakes, so be sure you’re getting enough cake mix + corresponding ingredients. We used a heart-shaped pan, but any shape will work just fine.
- Be sure to allow the cakes to cool completely once baked.
- Cut the tops of your cake to level them out. Set aside.
- Using an electric mixer, whip together cream cheese and powdered sugar.
- Add in cold whipping cream and mix until the mixture forms semi-stiff peaks.
- Use an offset spatula to ice the first layer of the cake.
- Add a layer of sliced strawberries on top of the cream frosting.
- Add second cake layer on top. Layer with frosting, followed by remaining strawberries (we added strawberries along the edges and then whole strawberries in the center for our cake).
