Welcome back, baking besties! Lisa here, your favorite Butter Mom! I’m glad you found me here at my growing cookie archive, The Secret Crunch.

Some of my favorite recipes happen completely by accident, and these Fruity Pebbles Marshmallow Cookies are proof of that.

I originally planned on making another batch of Fruity Pebbles cookies loaded with white chocolate chips (naturally!)… until I opened my pantry and realized I was completely out. Since I knew chocolate wasn’t quite the flavor I was after, I started thinking about what would still bring a little sweetness to every bite.

What Makes These Cookies So Special?

In my experience, Fruity Pebbles cookie recipes rely on white chocolate chips for sweetness, but these cookies take a different approach (especially because I lacked white chocolate chips!).

Instead of adding chocolate, each cookie is stuffed with a whole marshmallow that melts into the center as it bakes. The marshmallow creates a soft, gooey surprise that pairs perfectly with the fruity cereal and buttery cookie dough.

What Ingredients Do I Need to Make These Fruity Pebbles Cookies?

Be sure to gather the following ingredients to make these Fruity Pebbles Cookies:

  • Butter
  • Brown sugar
  • Granulated sugar
  • Eggs
  • All-purpose flour
  • Baking soda
  • Salt
  • Fruity Pebbles cereal
  • Large marshmallows

…the entire recipe and instructions are in the recipe card, just below.

Pro Tip: Seal Those Cookies!

You’ll see exactly what I mean in the recipe card, but I just wanted to make sure to highlight this instruction before you start baking. Be sure to completely seal the marshmallow inside the cookie dough. If any part is exposed, it may melt out during baking.

Can I add white chocolate chips?

Absolutely! White chocolate pairs beautifully with Fruity Pebbles and would make a delicious addition.

Store the cookies in an airtight container at room temperature for up to three days.
