Small Batch Red Velvet Cookies

- 3/4 cup flour
- ¼ cup cocoa powder
- ½ tsp salt
- ¼ tsp baking soda
- ¼ cup butter melted
- 5 tbsp brown sugar
- 3 tbsp granulated sugar
- 1 tsp buttermilk
- 1 large egg
- 3 tsp red gel food colouring
- 1 cup white chocolate chips
In a small bowl, sift together flour, cocoa powder, salt and baking soda. Set aside.
In a separate bowl, add butter and both sugars and whisk until well incorporated.
Add buttermilk and stir, followed by the egg.
Next, add red gel food coloring and mix until wet batter is completely tinted.
Add the wet ingredients to the dry ingredients and mix until a nice, thick cookie dough forms.
Fold in white chocolate chips. Once all ingredients are well-incorporated with one another, wrap in plastic and refrigerate for about 30 minutes.
Line a cookie sheet with parchment paper and bake in a 350 degree oven for about 8 to 11 minutes. Enjoy!
