Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 2 bell peppers chopped (we used orange and yellow)
  • 1 medium-sized onion chopped
  • 1 lb ground beef
  • Salt and pepper to taste
  • 3 tbsp garlic powder
  • 1 tbsp paprika
  • 2 cups chicken broth
  • 1 cup salsa
  • 1 cup brown rice
  • 1 cup shredded cheddar cheese

Instructions
 

  • Add oil to a large pot or Dutch oven and heat over medium
  • Start by cooking the bell peppers and onion, about 5-7 minutes
  • Add ground beef and brown
  • Season with salt, pepper, garlic powder and paprika
  • Add broth and salsa, followed by the rice
  • Stir to combine
  • Cover the pot and allow to boil. Lower heat immediately and let simmer about 20-30 minutes - be sure to check on the rice to make sure the dish is not overcooking
  • Remove from heat and sprinkle with shredded cheddar cheese
  • Serve and bon appetit!
