- 2 tbsp extra virgin olive oil
- 2 bell peppers chopped (we used orange and yellow)
- 1 medium-sized onion chopped
- 1 lb ground beef
- Salt and pepper to taste
- 3 tbsp garlic powder
- 1 tbsp paprika
- 2 cups chicken broth
- 1 cup salsa
- 1 cup brown rice
- 1 cup shredded cheddar cheese
Add oil to a large pot or Dutch oven and heat over medium
Start by cooking the bell peppers and onion, about 5-7 minutes
Add ground beef and brown
Season with salt, pepper, garlic powder and paprika
Add broth and salsa, followed by the rice
Stir to combine
Cover the pot and allow to boil. Lower heat immediately and let simmer about 20-30 minutes - be sure to check on the rice to make sure the dish is not overcooking
Remove from heat and sprinkle with shredded cheddar cheese
