Funfetti Muffins

Ingredients
  

  • Cooking oil spray
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup white sugar
  • 1 large egg
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • ¾ cup sprinkles divided
  • 45 teddy grahams

Instructions
 

  • Preheat oven to 400 degrees and line a muffin tin with muffin liners. Spray with cooking oil and set aside.
  • In a large bowl, sift together all dry ingredients: flour, baking powder, salt and sugar.
  • Next, add egg, milk, vegetable oil and vanilla extract. Mix until a thick batter forms.
  • Fold in white chocolate chips and ½ cup sprinkles.
  • Fill each section of muffin tin and top with remaining sprinkles (you’ll have to do this in two batches, since this recipe calls for about 15 muffins, and most standard tins come with 12 muffin sections).
  • Top each muffin with 3 Teddy Grahams each.
  • Bake for 15 to 20 minutes or until golden and when a toothpick comes out clean when inserted in the center of a muffin.
  • Allow to cool before serving. Enjoy!
