In a large bowl, mix together melted butter and both sugars. Add egg and combine.
Next, sift flour, baking soda and salt and add to your wet ingredients. Mix until a cookie dough forms.
Add white chocolate chips and ½ cup of sprinkles and fold into the cookie dough.
Chill the cookie dough in the refrigerator for about 20 minutes.
Once chilled, preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
Roll out cookie dough balls that are about 3 to 3 ½ inches in diameter. Place gently on the lined baking sheet, leaving about 2 inches of space between each one.
Press an Oreo cookie into the center of each dough ball.
Roll the edges of the cookie onto a plate with your remaining sprinkles.
Bake for 9 to 12 minutes or until edges are golden.
Remove from the oven and as the cookies cool down, press down on the Oreo to ensure it’s embedded into the cookie.
Allow to cool then serve!
