Baking bestie… I’ve gotta tell you the truth: you’re probably measuring your flour all wrong.

The truth is, measuring flour seems simple, but it’s one of the biggest sneaky culprits behind so many baking flops. A heavy hand with the flour can turn your dreamy desserts into dense, dry disappointments — and no one’s got time for that when you’re aiming for soft, fluffy, bakery-worthy treats.
Here are a few things you should know:
How You Measure Your Flour Absolutely Matters
Baking is basically a science experiment you get to eat — and flour is one of the trickiest ingredients. Why? Because it’s super easy to over-measure without even realizing it.
Most people grab their measuring cup, dip it right into the flour bag, and scoop away. The problem? That method packs down the flour, cramming way more into the cup than the recipe intended. Too much flour = dry, heavy desserts.

Easy Tips on How to Properly Measure Flour
Fluff It Up
Use a spoon to give your flour a little stir inside the bag or container. This lightens it up and breaks up any clumps.
Spoon It In
Gently spoon the flour into your measuring cup, letting it fall in loosely. That’s right, you do not want to scoop your measuring cup into the flour.
Level It Off
Use the back of a butter knife or offset spatula to sweep across the top of the cup and level it.
Done. That’s it. Your cakes will thank you later!

💡 Pro Tip: Weigh It If You Can
If you want to get really accurate, I highly recommend a kitchen scale. For the longest time (and I mean decades), I was using store-grade measuring cups, and while good brands are pretty reliable: nothing beats the accuracy of a kitchen sale.

This is where weighing comes in: for the most accurate flour measurement, weighing your flour is your best choice.
There are tons of conversion charts out there, but to put it into perspective: 1 cup of all-purpose flour = 120 grams.

Honestly? Almost all of them. But especially:
- Cupcakes (hello fluff factor)
- Cakes (texture goals)
- Cookies (so you don’t end up with cookie bricks)
