Pecan Upside Down Cake

When you feel like treating yourself to something extra, but don't want it to feel like work, make this fancy and easy pecan upside down cake.

Ingredients
  

  • Cooking spray
  • 2 tablespoons butter melted
  • 1 ¼ cup granulated sugar divided
  • 2 cups pecans
  • 1 ¼ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • ¾ cup vegetable oil
  • ¼ cup sour cream
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F.
  • Coat an 8 or 9 inch round pan with cooking spray. Line with a circular piece of parchment paper (you can trace your pan on the parchment paper with a pencil then cut). Spray on top of the parchment with another layer of cooking spray.
  • Pour melted butter into the lined pan, making sure it’s evenly coated. Next, add a layer of sugar (1/4 cup).
  • On a single layer, add pecans to your buttered pan and set aside.
  • In a large bowl, sift together flour, baking powder, baking soda and salt. Mix in remaining granulated sugar (1 cup).
  • Next, add cinnamon and combine.
  • Next, add eggs, vegetable oil, sour cream and vanilla extract. Mix until a thick batter forms.
  • Pour the batter into the pan, ensuring it’s even by using a spatula. Tap on your countertop to fill in any airholes.
  • Bake for 25 to 30 minutes. Allow to cool for about 10-15 minutes and pass a serrated knife along the edge of the pan.
  • Turn the cake upside down onto a large serving platter. Enjoy!
